Think of seaweed's health benefits and it's likely that topping up levels of iodine springs to mind. But there are more reasons for eating a nori roll than just iodine, a trace mineral that's important for a healthy thyroid gland but which can also be scarce in our food supply. Besides being a good source of fibre, seaweed is such a useful package of other nutrients – including protein, vitamins, minerals such as iron and zinc, antioxidants and omega-3 fats – that we should include more of it in our diet, says marine scientist Dr Alecia Bellgrove from Deakin University's School of Life and Environmental Sciences.
